Chicken Lettuce Wraps

Swapping lettuce for bread or a low carb tortilla style wrap is a great way to increase the nutrition of your meals and decrease the calories. If you are looking to cut your intake of processed grains and find ways to create meals that support weight management, this is a great option for anytime you are craving a sandwich.

Also, craving a burger? Go for it, but swap the high calorie, nutrient low bun, for a lettuce wrap!

Ingredients

  • 2 romain lettuce leafs
  • 1/4 cup sauerkraut
  • 3 tbs shredded carrots
  • 4 oz chopped oven roasted chicken
  • 1/2 tbs mustard
  • 1/2 medium avocado
  • 1 tsp nutritional yeast

Instructions

  1. Add chopped chicken, avocado mustard and nutritional yeast to a bowl and lightly mash to combine. Salt and pepper to taste. Add 1 Tsp nutritional yeast if desired.

    Distribute chicken mixture between lettuce leafs and top with shredded carrots and and sauerkraut

    Eat!
