Vegetable Ideas: Broccoli (Protein/Fiber/ Vitamin C & K, Folate), Asparagus (protein/Fiber/ Vitamin K), Sweet Potatoes (Vitamin A & B’s/Fiber), Brussel Sprouts (Protein/Fiber/ Vitamins C, K & B/ Omega-3)

Directions: This is the easiest recipe ever! Cut up any vegetables you want into similar size pieces. Coat in a small amount of cocoanut oil, butter or Ghee and salt. Place in 400 degree oven for 20-30 minutes; shaking or flipping half way through. Experiment with seasonings and different oils and butter. Eat right out of the oven and then refrigerate the rest to use during the week.
